Soon, you’ll be able to get it in Adelaide’s beautiful burbs. But the catch – an undeniably fresh one at that – is that this sushi no teikuauto is around for less than 24 hours.

Ibuki’s premium sushi boxes consist of fish from Australia and Japan shaped into little morsels of joy. They include specialty sushi such as konbu (kelp) cured kingfish, zuke tuna, vinegar cured snapper, gurnard and the king of the show – toro (tuna belly).

Trained in Tokyo, Chef Yohei Hombo, ex-head chef of Yuki in Burnside, focuses on bringing out the flavours and texture of each fish and balancing that with rice that is sweet, tangy and full of umami.

Each sushi box is prepared fresh right before you arrive to pick it up. Importantly, there’ll only be a limited number of boxes available as all sushi is handmade. Boxes will include large and small maki rolls, Japanese egg omelette (dashi-maki tamago), wasabi, ginger and homeblend soy sauce. $68 for 8 pieces and $85 for 12 pieces.

Pre-order your box here. And pick it up from Fine & Fettle here.
