Since its July launch, the brasserie and bar, curated by the culinary genius Alexis Besseau (formerly of Restaurant Huberts, Sydney), has been dishing out timeless classics. Picture bouillabaisse with Murray cod and red mullet, escargots dripping in butter, garlic, and herbs, and a gruyere cheese soufflé that’s twice-baked perfection. All this accompanied by a carefully curated selection of wines, craft cocktails, and the soulful notes of live jazz.
