Waymouth Street restaurant Eleven rebrands to Roma

Sprout Food Group's Callum Hahn and Themis Chryssidis are changing gears and will offer a more casual modern Italian experience at Roma.

The revamped Roma will “tap into that alfresco dining experience” and provide relaxed dining from Wednesday, September 4.

“The style of dining that people have enjoyed in the last three or four years has changed,” Themis says.

“The amount of money people are willing to spend has changed. The experience they’re looking for has changed — and not just that — the experience that we want to provide to people has also changed.”

Part of the rebranding is inspired by the construction of the new Adelaide Marriott Hotel on King William Street, which is just beside the restaurant.

“Now felt like the right time and we have recognised that the market has changed, but we also appreciate that with the introduction of the Marriott Hotel, the whole precinct is going to change significantly as well,” Themis says.

“We thought that this was the right time and the right opportunity for us; [the hotel] will bring activity to the area and also open up foot traffic from King William Street and Franklin Street.”

“We are really excited to bring this little corner of this little piece of city to life as well. Over the last three years when the Marriott has been constructed, there’s been a big wall up, so [Eleven’s] been a little hidden gem,” Callum adds.

With an entire menu change, new little deli and outdoor area, Roma will take on an Italian style similar to their current restaurant Olive on Pirie Street.

“With two guys who love Rome and that’ve been there multiple times, it makes sense to take it Italian,” Themis says.

“At the end of the day, I’m a big believer in you’ve got to put the right cuisine and the right experience to the right location.

“For us, this precinct that is being created here for us with our new little deli that we are taking on board has a new kind of Roman feel.”

Callum and Themis say that their overarching goal with Roma to have “people to come here and to feel welcome and relaxed”.

“We were thinking about the kind of food that we wanted to cook for our friends and family, and while pulling those factors together, I guess that modern Italian style fits all the boxes that we were trying to achieve,” Callum says.

Themis says they are currently working to refine the menu, as there are 60 items listed. However, it will definitely feature small plates, house-made pastas, seasonal vegetable dishes and a grilled section.

 

Themis reflects on the anticipated experiences of Roma and purpose of the rebrand.

“We are really excited about Roma,” he says.

“The dining experience is more than about what happens on the plate; it’s the service, it’s the food, it’s the beverage, it’s the people you’re dining with, it’s the ambiance of the venue.

“Everyone is welcome at Roma.”

Amid the opening of Roma, Themis and Callum will be concentrating on “getting back to the basics” with their cooking school Sprout.

“We are focusing more on the education aspect at Sprout with school programs and general public cooking classes,” Themis says.

“Sprout is who we are and, for us, it’s about consolidating that over the next few years.”

Roma is located at 11 Waymouth Street, Adelaide and will reopen on Wednesday, September 4.
