All I want for Easter is deep-fried chicken

Chef Morgan McGlone is set to make Adelaide's Easter extra delightful and deep-fried when he takes over the Africola kitchen for a special, one-off event this Sunday.

Chef Morgan McGlone is the hero behind Melbourne institution Belle’s Hot Chicken, and this Easter Sunday you can taste his wares without even going to the trouble of crossing state borders.

The Belle’s Hot Chicken takeover happens at Africola on Sunday, April 5 from 4pm – 9pm. Bookings can be made at the Africola website and walk-ins are welcome.

As part of Africola chef Duncan Welgemoed’s ongoing series of guest events, Morgan will be taking over the East Terrace eatery’s kitchen all Sunday afternoon and evening.

Cooking a range of his signature dish, which ranges in heat from “Southern” (spiced with a bit of cayenne pepper and paprika) to the chilli-laden “hot”, Morgan is keen to introduce Adelaideans to what has been called “Australia’s best fried chicken”.

“It’s an amazing honour to be invited to cook with Duncan and his team and I’m also looking forward to seeing Adelaide as I’ve never visited there,” he says.

I think the best way to sum up how excited I am to cook at Africola with Duncan is this: The food I’m most passionate about is Modern Southern Cuisine which has its roots set in Africa.”

Morgan’s chicken recipes have been developed over a luminescent career in the kitchen which has included multiple stints working alongside the lauded Luke Mangan and time in the kitchen of Nashville’s world-famous Husk.

Things will not be neglected on the liquid side of the equation either, with Africola pouring a special selection of natural wines from Jauma, Anton von Klopper, Gareth Belton (Gentlefolk), Michael Downer and others on the night.

Duncan will also join Morgan in the kitchen – albeit in a limited capacity as he cooks up some sides to accompany the chicken.

“I’ll be making some sides like famous green beans, grits and coleslaw, but I’ll mostly just be watching the fried chicken master Morgan McGlone take over my kitchen,” says Duncan.

“When Belle’s Chicken did a similar take-over at Icebergs in Bondi Beach, they sold out of everything within an hour.”
