The brainchild of experienced baristas Ramy Massoud and Adam Raslan, new CBD café Cherry champions itself on serving high-grade specialty coffee.

“We are a specialty coffee bar, and what that means is we only use coffee graded in the top 20 per cent,” Ramy says.

Cherry’s house blend is SOAR, from Melbourne-based roasters Veneziano – a light blend with a mix of fruity flavours and hints of peanut butter and butterscotch.

They also stock beans sourced from microlots (coffee from small, higher quality plots from select farms) on a rotating cycle.

“We are very farm to cup, and we make sure the farmers get as much money as possible from the sale,” Ramy says.

On the food front, Cherry stocks a selection of pastries and rolls provided by Jenny’s Bakehouse, as well as Adam’s homemade bircher muesli.

For those looking for deeper insight into their morning brew, Cherry also offers educational experiences over their six-metre coffee bar.

“We are a general specialty coffee shop, but we got offerings for those that want to go a little further than your flat white or latte,” Ramy says.

There is the barista breakfast, where you’ll trial an espresso, milk-based and filter coffee, much like a barista seasoning their machine first thing in the morning.

Cherry also has a reserve coffee selection, which Ramy describes as “like a wine menu,” cataloguing some of the best blends he and Adam have encountered.

“We get these pre-frozen and vacuum-sealed from the roasters, and we’ve been building this menu for years,” he says.

For anyone wanting to take the Cherry experience home with them, the café sells a rotating selection of beans, including microlots from Veneziano, as well as alternating single-origin roasts. All of this can be brewed at home with the high-grade barista equipment also sold on site.

“These are for people that want to make their own but don’t want to go the route of an espresso machine,” Ramy says.

“We want to show that you can use manual brew and you can make coffee just as good as us in your own home.”

Cherry is located at 29 King William Street and opens Monday through Friday.
