Coorong Fish Tales at Ragi’s Spicery

Adelaide chef Ragini Dey has invited South-East producers Coorong Wild Seafood into her restaurant, Ragi’s Spicery, for her very first seafood-focussed lunch event, held this Sunday, 16 June.

It was after meeting Coorong Wild Seafood’s owners, Tracy and Glen Hill and experiencing their produce that she saw cause to celebrate seafood with a dedicated event.

“I never got so excited about a range of seafood,” Ragi says.

“It’s so fresh it literally jumps into one’s mouth and [there are] very many ways of playing with it.”

The menu will consist of “a few small bites, four larger dishes and dessert,” with Ragi taking cues from coastal India.

“The East, West and South of India are well known for their cult favourites and distinct seafood recipes from simple turmeric fried to coconut based curries,” she says.

“All manner of cooking techniques and fish are used in the cooking of Bengal, Kerala and Maharashtra Spices are used to enhance the seafood, never to dominate We will be showcasing the best of these dishes as suited to the Coorong Catch with our Sunday afternoon long lunch.

“Quality seafood respectfully treated with a light touch of spice Indian style ceviche, Mumbai cult favourite, fish wrapped in banana leaf, baked, Bengal fresh herb marinated and crumbed fish, whole fish steamed with freshly ground black and yellow mustard seeds, seafood Biriyani, five-spice fish curry with winter vegetables and more.

“The accent will be on using a variety of fish such as Coorong mullet, mulloway, pippis and Glen’s catch of the Day, palate-cleansing dessert.”

Alongside Ragi’s tour through her own culinary insight, the Coorong Wild Seafood team will be on hand to share stories of where the produce has come from, and they’ll also host a mini fish market.

“People will be able to purchase at special prices from Tracy and Glen’s fish of the day. I am so happy to have met someone who is interested to go in this deep!” Ragi says.
