As the springtime air in the CBD turns sweet and the afternoon light lingers, pull up a stool at Proof for the perfect seasonal accompaniment.

Joe Wilkinson and Shane Ettridge took up the lease at the old Delicatessen spot and officially opened Adelaide’s first ‘small bar.’

The spirit: Springbank whisky

This Springbank whisky showcases so many aspects of what whisky can offer – it’s coastal, salty, fruity and spicy with all the Scottish heritage you could ask for.


The beer: Bridge Road Chevalier saison

The Bridge Road saison will lift your palate in spring. Not too sour as some saisons can be, this brew from Beechworth has a tang, zest and energy that goes great with chevre as well as the warmer evenings the season brings.


The wine: La Petite Vanguard riesling

Possibility abounds in this elegant expression of a Watervale riesling. Michael Corbett of Vanguardist has bottled liquid both fresh and deeply complex.


Hey Bartender

Eden Dickin has served six months behind the bar at Proof and says he was drawn to this spot after many years in hospitality because the bar is “exactly what I think is good.”
